Well it has been forever since my last blog. We have been busy painting our living room ceiling and walls. Now that that is almost done we can relax for a while and then it is on to tackling the kitchen. Man I can't wait for that to happen!
Eating vegan has been a lot easier then I thought it would be. Ed hates it so he doesn't do it with me. Eating out is the hardest thing to do because there are not meaning vegan dishes that restaurants offer so I have found that when we eat out I will have to go with a regular meal. I am ok with that as long as I stick to the no meat at home. I have been taking my lunch to school everyday and I stick to making meals that Ed can add meat too. That way I am only making 1 dinner not 2. He helps me find meals that I can add tofu to and he can add meat to them.
On eating out we have a great place called Mongo here in town. I have loved this place ever since it opened! It is a stir fry restaurant and you go up to the bar and have 3 different bowls one for veggies, meats, and sauce. I had about every veggie and noodle you could have in my veggie bowl and choose tofu for my meat. I mix about 3 different sauces together to get the flavor I want and then the put it on the grill and bring it out to you after it has been cooked. I get brown rice with mine and mix the rice in there with it. It is so filling and wonderful! That is about as vegan restaurant as it gets here in south Georgia!
Ed is actually excited about dinner this week he has found a recipe for bok choy stir fry with tofu. Lets see if he tries the tofu or if he adds chicken too it.
This last week it has been so nice out and next week the dogs and I are going to start walking can you see me walking around the neighborhood with 4 dogs! That's right we have 4 dogs and I want to add another one. Ed says I am crazy. We will see how long I walk with the 3 wild ones because they have never walked on a leash before. I am not sure how they will do. It will be a sight to see I am sure.

Day 1 of Vegan eating
Monday was difficult because I did not have time to go to the grocery store this weekend. So that meant no cereal because I am not drinking "real" milk, or bagel because no "real" butter or cream cheese. Lunch well that was also difficult because I had no lettuce so no salad. Speaking of salad man I can't have ranch dressing! Ahhh that will be hard! Well I finally got to the grocery store and got a weeks worth of vegan meals. Tonights meal was "Chicken" Alfredo with broccoli. I have to admit I was not sure how it was going to taste because real chicken alfredo is one of my favorite meals ever. They tasted like chicken but then again what doesn't taste like chicken. Tomorrow is Kashi cereal with blueberries and soy milk. And a smoothie. Lunch will be left overs. Dinner is a "meat" sauce made out of tofurkey italian sausage and veggies added in on egg noodles with a salad.

On a quest to become vegan
Last week I was watching Oprah and saw her vegan show. Now I know there is some controversy with that show because some people think that Oprah did not portray being a vegan well and her guest focused only on the health aspect of it and not much on the animal cruelty. Well I went out on Wednesday and bought Kathy Freston's book Veganist. I finished it on Friday and by that time I had decided that I was going to give being a vegan a shot. Now if my parents are reading this right now I am sure they are laughing because I have not really ever been a veggie eater well I am going to learn to love them. Because after reading the animal cruelty chapter in Kathy's book I am not sure I will ever be able to eat meat again! With that being said this will be about my quest in giving up meat and dairy. The other day while reading Veganist I was eating cheese and realized oh my I won't be able to eat "real" cheese anymore. Cheese is my weakness! I love it! All I have to say is that thank goodness wine is made from grapes I am not sure I could give that up! So Monday is the day to start eating vegan...
